Takahashi green tea became the first farm in Oita, Japan to earn a JAS organic certification. The farm is run by second-generation producer Takahashi Yuzo, specializing in tamaryokucha; a jade-colored green tea similar to sencha but distinguished by its curled leaves and a final drying stage of rotating in hot-air drums. Takahashi cultivates seven tea varietals, continuing his family’s legacy of organic standards and the meticulous preparation of fine Japanese teas.
