Slopeside's organic golden maple syrup is collected from the first harvest of the tapping season, as the trees begin to wake from their winter slumber. Generally sweeter than amber and dark syrup, it is soft and floral, with a dominant note of honeyed vanilla.
Produced from late February to early March, when the sap is clearest and lowest in microbial activity, Golden syrup is naturally higher in sugar concentration and lower in water, requiring less boiling which yields a more delicate and refined taste.
