Japanese tea growers call this tea, CHISEN, which means "Spring of Wisdom", referring to the parallel between the flow of knowledge and that which springs from the teapot, warming all who receive it. CHISEN is award-winning, competition grade Japanese koucha, well-known for its distinctive depth and naturally balanced flavor, organically grown by tea master Harashima Masashi in the Yame mountains at 500 meters above sea level. Single-origin, single-cultivar tea leaves are fermented using time-honored traditional methods to produce a distinctly sweet, malty tea. Organic Japanese Koucha is exceptionally rare even in Japan, produced by only a small number of Japanese growers who devote an immense amount of time and effort to every stage of cultivation and preparation. The tea leaves undergo a slow, carefully monitored fermentation process, lending to a smooth, honey-like flavor with mild tannins. Each harvest of Koucha tea is produced in limited supply and deeply valued for its purity and fine nuances. It is thoughtfully presented in a generous fold of handmade Japanese washi paper flecked in gold and silver.
For three generations, Harashima Masashi and his family have devoted themselves to cultivating exceptional teas; a tradition he continues as Master of the Kofu Sencha Reifu school and a certified Nihoncha Central Instructor. His approach to organic farming has developed into a specialized method that relies on fermented organic bokashi fertilizers, carefully adjusting the amounts at every stage of cultivation to match the year’s weather conditions, ensuring the tea is of a consistent quality year after year.
