Heritage roses growing wild along a grassy path on the Rosa di Magliano farm

About the farm: Rosa Di Magliano farm rests in the Chianti hills near the small hamlet of Magliano, in the province of Florence, isolated from commercial farms and pesticides. Their organic rose syrup and jam is made with the “Duc de Cambridge” damask heritage rose and a variety of other highly fragrant antique roses, wild-grown on their farm.

Rose preserves are made according to the late-renaissance Ligurian recipes, dated c. 1680, originally recorded by Genoa merchant Gian Domenico Peri, who said that preserves made in accordance with Genoa recipes were “the most excellent in the world.”

Preparing the roses for consumption is done entirely by hand, from harvest to small-batch production. Even the lemons used in the recipes come from a lemon grove on their farm. Processing is finished in stainless pots and preserved in glass jars using certified organic cane sugar from Brazil.

Recommended uses: organic rose syrup can be diluted with sparkling or still water, a few slices of lemon, or a mint leaf to create a refreshing drink. It is also excellent stirred into red tea or added to Prosecco wine to make a rose cocktail. Organic rose jam makes a delectable spread on buttered toast or mixed into plain natural yogurt. It is also recommended as a cold filling for a sponge cake or a dark chocolate torte.
